Abstract：The decomposition of Elaeagnus angustifolia to nitrite was studied by spectrophotometry. The result showed that Elaeagnus angustifolia， which contains rich vitamin C， vitamin E and proline etc.， can react with nitrite and reduce its concentration with lasting time.
